A Sweet Meringue Mother’s Day Bouquet

Mother’s Day is just around the corner and, as in many families, this is an occasion we look forward to with fantastic anticipation. What could be more fun than spoiling the lady who knows your ins and outs better than you know yourself?

Mother’s Day originally stems from celebrations of motherhood in ancient Greece and Rome, where festivals were held in honour of the mother goddesses Rhea and Cybele. However, the most recognisable modern precedent for Mother’s Day is the European festival known as “Mothering Sunday” which still falls on the fourth Sunday in Lent and was originally seen as a time when the faithful would return to their home town to receive a blessing from their mother.

Over time the Mothering Sunday tradition shifted into a more secular holiday, and children would present their mothers with flowers and other tokens of appreciation. This custom eventually gained popularity and led to the American Mother’s Day which really took off as a globally significant occasion in the 1930s.

The perfect Mother’s Day gift

Although Mother’s Day is a highly commercialised event, the best gifts for most Mom’s are often the more thoughtful rather than elaborate gestures. Serving her coffee and rusks in bed, cooking her a nice lunch, or writing a heartfelt note can mean the world to a mom. However, if you do want to splurge on your beloved mom this Mother’s Day, bear in mind that the most popular gift is still flowers, and roses in particular.

We’ve combined this tried and trusted favourite with one of our preferred sweet treats for a special CAB Foods twist on the Mother’s Day bouquet.


Mother’s Day Meringue Bouquet

These rose-themed meringue lollipops are a beautiful and delicious way to spoil your mother with something home-made, and they’re surprisingly easy to make. Meringues are per definition gluten free and low in fat, but for a mom who’s watching her sugar intake, you can substitute the CAB Foods Meringue Premix with 2 egg whites beaten with half a cup of xylitol and a pinch of salt.


What you’ll need:

Half a pack of CAB Foods Original Meringue Premix

100 ml lukewarm water (Note, this is slightly less water than what the instructions ask for, but bear in mind you’ll be adding liquid colour and flavour as well.

Baby Pink Barco colour gel

Forest Green Barco colour gel

Flavour Nation Ice-Cream flavouring

Sosatie skewers or ice-cream sticks

#127 Rose piping nozzle

#67 Small leaf piping nozzle

2 Piping bags

To prepare:

Heat your oven to 110 0C and whisk half a packet of CAB Foods meringue premix with 100 ml of lukewarm water on high speed for 10 minutes. While your mixer is running, add a few drops of your ice-cream flavouring according to taste. The ice-cream flavouring adds a lovely smell and richness to your roses, but you can, of course, substitute this for any other flavour your mom would prefer.

After 10 minutes, when your batter starts to forms stiff peaks, scoop a third into a separate bowl. Add a few drops of pink colour gel to the remaining batter and whisk until the colour has thoroughly blended.


Add a few drops of your green colour gel to the batter you’ve separated and mix thoroughly.

Prepare a piping bag with your pink batter and rose nozzle, and another piping bag using your green batter and leaf nozzle. Place your sticks on a prepared baking tray lined with baking paper or a silicone mat.


Pipe a small amount of batter onto your baking tray to secure the top of each stick. To create a rose, pipe petals with your pink batter and rose nozzle starting small at the top of your stick and going larger as your rose gains diameter. Once you are happy with your petals, use your green batter and leaf nozzle to add leaves. Bake for 2 to 3 hours until the roses are lovely and light.

Depending on the size of your roses, you’ll end up with a bouquet of between ten and twelve that you can present to your mom with a delicious cup of tea.
